California pomegranate cured @spencergulfkingfish with caramalised fennel, orange and fennel tops!? Our Australian Yellowtail was cured with Californian pomegranate for 5 days (skin & semi crushed seeds were used in the curing process), and basted with freshly made promegranate molasses. The results showed absolutely amazing flavours, with the promegranate having a sweet tart citrus juice like balanced taste, which works perfectly when curing the fish. ? @therussolinigroup @le_blanc_13
