TASTE

  Distinctive, subtle non fishy taste and aroma.

FAT CONTENT

  Typically, 18-25%. Change seasonally from low in mid-spring, to high in Autumn/Winter.

BROOD STOCK

  Brood stock is wild caught fish: 27-30kg aged 10yrs+. Fingerlings are grown out in sea cages in the cold waters of Spencer Gulf, South Australia.

FEED

  Dry, extruded pellets, natural fish proteins with seasonal diets specifically formulated for Hiramasa Kingfish which are GMO free and land animal product free.

HARVEST METHOD

  Low stress harvesting using percussion stunning method. Fish are bled and salt water chilled immediately, for best culinary quality.

FLAVOUR

  Rich, sweet, clean and full-flavoured.

TEXTURE

  Firm with few bones, white to pinkish colour.
